Ingredients:

1 1/2 Tablespoons Peace Passion Powder from Botanical Lucidity
- 1 can Coconut milk (full fat)
- 1/4 cup dark cherries, pitted (fresh or frozen)
- 1 cup of almond meal
- 1 teaspoon vanilla extract
- 1 pinch salt

Optional : 2 tablespoons hollyhock flower petals, blended into coconut milk in blender.
Shell Ingredients:
- 1/2 cup 72% dark chocolate
- 2 Tablespoons coconut oil

Topping: hollyhock petals and edible flowers to garnish
Directions
- You will need popsicle molds for this - I made 4 popsicles from this recipe.
- In a medium bowl, whisk the coconut milk (blend with hollyhock flower petal if using. Then whisk in the Peace Powder and maple syrup, vanilla extract, and pinch of sea salt. Add in chopped dark cherries., hollyhock
- Pour evenly into 4 popsicle molds and freeze.
- Once the popsicles are frozen, prepare the chocolate shell.
- You will want to have your garnish ready because the shell will harden quickly.
- Make a double boiler with a heat safe bowl and a medium/small saucepan. Place the saucepan on the stove, half filled with water. Bring to low boil and place the heat safe bowl on top-make sure the bowl is not touching the water!
- Combine the dark chocolate and the coconut oil in the bowl and stir until they are melted. Remove the bowl from the saucepan.
- You can also use a microwave for this stage, and stir the chocolate with the coconut oil, heating for 15 seconds each time until it is melted.
- Take out one popsicle at a time and using a large spoon, pour the melted chocolate over the popsicle, coating it front and back.
- Immediately add the toppings of your choice and place on a parchment lined plate and place back in the freezer, unless you're going to eat it right away.
- Continue on with the rest of the popsicles in the same way. You can save any remaining chocolate shell in the refrigerator and reheat it to use on other treats.
