Elixir-Infused Vegan Ice Cream
Servings: 3-4 • Time: 1.5 hours
- 2 tbsp Cacao Nectar or Magick Matcha
- 2 cans of coconut milk
- 1/4 cup maple syrup
- 1/2 cup raw cacao powder (for added chocolatey taste if desired; I only add this if I'm using the Cacao Nectar elixir)
Toppings: frozen or fresh raspberries, blueberries, strawberries, and organic coconut flakes
Add 2 cans of coconut milk into the blender along with your elixir blend of choice. (favorites are Magick Matcha or Cacao Nectar, but others work well, too) Then pour in maple syrup and blend until smooth and well mixed. Add additional cacao if desired (optional). Blend again until fully mixed. Pour contents into ice cube trays. Freeze. Once frozen, allow them to thaw for about 15 minutes, and then put the cubes into the blender again.
Blend until smooth, adding small amounts of water to help the cubes to blend.
Once blended, scoop into bowls and top with berries and or coconut flakes. Yum :) and therapeutic.
