This recipe is loaded with healthy fats, containing cacao butter and nut butter, while also being a great source of protein (contains about 68 grams of protein per pan!) These bars are also delicious and easy to make at home, as they contains a lot of ingredients that are likely to already be stocked in your kitchen.👩🏽🍳🌿
Matcha Protein Bars
Ingredients:
- 1 cup oat flour
- 1 cup rice cereal
- 1/2 cup nut butter
- 1 tsp vanilla powder
- 1/2 cup of protein powder
- 1/4 cup of soy milk or any plant based milk
- 1/3 cup of maple syrup
💚 Matcha layer 💚
- 1/2 cup of cocoa butter or coconut butter
- 1 tsp of Japanese Matcha by @botanicallucidity
- 1 tsp green spirulina powder/green powder
Directions:

- In a blender, blend 1 cup of rolled oats to make 1 cup of oat flour
- Mix in rice cereal and pulse a few times until blended, but not grounded to a fine powder
- Pour contents of blender into a medium bowl and mix in the rest of the ingredients.
- Line a square pan with parchment paper and press the mixture evenly using the back of a firm spatula until smooth and even.
- Place into fridge for a few hours until set.
💚 Method for Matcha Layer 💚
- In a double boiler, boil your cocoa butter or coconut butter until melted.
- Add in your matcha and spirulina or other superfood green powder.
- Gently pour over your prepared square pan with protein bars.
- Let it set in the fridge overnight.
- The next day, using a hot knife (dipped in hot water) cut your bars into desired shape.
